There’s a reason why El Matador’s tapas resemble their Spanish equivalents. As highlighted by both the North Shore Outlook and North Shore News, co-owners Paul Mon-Kau and Jeff Murl traveled to Andalusia and frequented nearly 60 local tapas bars and restaurants on their quest to achieve authenticity. “I didn’t want to fake it,” said Mon-Kau. Instead of returning to Vancouver with souvenirs and phony Andalusian accents, they returned with recipe ideas for grilled goat cheese, honey-coated almonds, smoked olives, and chorizo. They serve up their results in a festive basement eatery, where diners share bites within close quarters and cheers over rounds of Spanish wine and beer.
