$110 for a Cooking Class with Dinner ($250 Value)

Classes of up to 14 people learn about sausage recipes and practice making their own gourmet links. The instructors then teach pupils how to trim, cure, and juggle salmon before demonstrating techniques to cook the fillets. Finally, participants learn how to buy, trim, and braise two different cuts. After class, students sit down for a communal-style dinner, during which they fuel up on succulent meat and partake in a Q&A session with the butcher, the chef, and the chef’s hat. Inspired by Old World butcheries and bistros, the duo of chefs who own Big Lou’s Butcher Shop call upon local, organic, and sustainable ingredients to cultivate a selection of hand-prepared meats and succulent deli-style sandwiches. Glass display cases grant peeks at the day’s selection of handmade sausages and meat, including enough bone-in rib-eye steaks to fill a year’s worth of birthday cards. Patrons can also take home restaurant-quality preparations such as dressed racks of lamb, or immediately quell their hunger cries at a Brooklyn-style sandwich counter serving sandwiches such as pulled pork. Additionally, on-site classes teach small groups the skills needed to slice up meat or cook fish using only a stern gaze. The butchers source all their meat from local farms that boast organic, sustainable, and free-range practices.
