Nu Restaurant’s seasonal menus pamper palates with inventive, Mediterranean-inspired dishes derived from locally sourced ingredients. A lauded team of chefs crafts four courses of light eats in a dinner menu, which kicks off with lemon-cured salmon. Diners pair the tasty fish with compressed cucumber, potato, roasted garlic skordalia, and pita made in-house from construction plans inscribed on another pita. Chefs fold dough around spinach and feta to transform them into phyllo triangles accented by smoked tzatziki sauce and pine nuts. A seared helping of ultra-rare albacore tuna introduces spoons to garnishes of tomato seafood kakavia, saffron rice, summer squash, and avgolemono soup. For dessert, teeth navigate through layers of baklava and tongues cluck greetings in Morse code to walnuts, mint, lavender, and honey.

Diners recline in two levels of dining space adorned with floor-to-ceiling windows that reveal the False Creek waterfront and the West Coast sunset. An outdoor seating area is also available during warm weather for sharing the atmosphere with a friend, date, or fraternal twin once removed.
