Within a 4,300-square-foot brewing and winemaking facility, Purple Castle Brewing’s savvy staff helps fledgling winesmiths craft and bottle their own libations using state-of-the-art equipment. Patrons peruse the extensive list of reds and whites—including a dry pinot noir, an off-dry gewürztraminer, and a sardonic eight-week Australian shiraz—in search of an iteration of adult grape juice that ignites their inner dionysians. Under the adroit wing of a knowledgeable staffer, patrons whip up a 23-litre batch of their preferred wine, enough to fill 30 750-mL bottles or one kiddie-pool-sized decanter. Vinous brews then hunker down to undergo flavourful maturation for four to eight weeks, after which their creators return to the brewery to steal a sip of their handiwork before relocating the fermented potations to their glass cages. A 30- to 45-minute bottling, labeling, and corking session ensures newly minted wine remains fresh for up to two years. Purple Castle Brewing advises guests to let their wine rest for up to two weeks post-bottling to procure a more developed mouthfeel and avoid exhaustion-based temper tantrums mid-pour.
