The six-course menu represents an extravagant swathing of executive chef Robert Clark’s creative concoctions, composed from local, sustainable seafood and produce. Greet your meal with a sensual smooch as your friendly servers usher out three eligible Pacific Kiss oysters, freshly shucked and selected by the B.C. Shellfish Association and Matchmakers Union. Next, an heirloom tomato salad bombards tongue buds with bursts of fresh basil and grape must before a third course of decadent mussel-and-clam risotto arrives, infused with tomato consommé and bacon and black-bean puree.

The decadent procession continues with roasted sablefish accompanied by a posse of lobster gnocchi, chanterelles, and lemonade foam, before the fifth course of seared Bayne Sound scallops arrives in an opulent litter carried by twice-cooked foie gras, braised beef, asparagus, and truffle gastrique. Choose between rich and tarty with two dessert options—a strawberry gratin of ice wine poached berries and pistachio ice cream, or simply decadent shellfish chocolates, served with coffee and tea. You can also add wine pairings to the tasting menu for an extra $50 per person, and substitutions may be made for dietary restrictions.
